Greek Style Garbanzo Salad
1 1/2 cups cooked* or 1 can (15 oz.) garbanzo beans, drained
1/2 cup thinly sliced red onion
1/2 cup diced tomato
1/2 cup chopped green bell pepper
3 tablespoons rice vinegar or apple cider vinegar, or to taste
2 tablespoons lemon juice
2 teaspoons olive oil
1-3 tablespoons minced garlic
2 tablespoons chopped fresh parsley
Salt and pepper to taste
*1/2 cup dry makes 1-1/2 cups cooked.
Combine all ingredients in a large bowl. Let marinate at room temperature several hours then refrigerate. Makes 3 cups. Serves 4-6.
