Mixed Bean Casserole

1⁄2 to 1  pound ham
1             clove garlic, minced or juiced
1             large onion, chopped
2             cups cooked*, drained red kidney beans or one 16-oz. can, drained
2             cups cooked*, drained garbanzos or one 16-oz. can, drained
1             can baked beans (16-oz. without tomato sauce)
2 to 4     tablespoons brown sugar
1 to 2     tablespoons prepared mustard
1⁄2          cup catsup
1⁄2          cup red wine (or 1/2 cup water plus 3 tbsp. vinegar)
Salt and pepper to taste

Trim fat from ham and fry out in large skillet. Cut ham in small strips and brown lightly in the hot fat. (If ham is extra lean, add 2 tbsp. oil). Add garlic and onion; cook until tender. Add beans and other ingredients. (The canned baked beans help to flavor the mixture and hold it together.) Taste; add more seasonings and more liquid if needed. Turn into 2-1⁄2 quart casserole, top with onion slices, and bake at 350ºF for about 45 minutes.  Makes 6 to 8 servings.
