Blackeye Fritters

2          cups cooked*, drained blackeyes or one 16-oz. can, drained
1/3       cup finely chopped onion
1/4       cup minced parsley
1          egg
2          teaspoons minced fresh ginger root
1/2       teaspoon minced garlic
1          teaspoon whole cumin seeds
1          teaspoon ground coriander
1          teaspoon salt
1/4       teaspoon hot red pepper

In a medium bowl, mix all of the ingredients for the fritters. Coarsely purée the mixture in a blender or food processor, in several batches if necessary. Pour 3 inches of oil into a deep-fryer or heavy, deep saucepan. Heat oil to 375ºF. Drop the fritter batter by rounded tablespoonfuls into the hot oil, 4 or 5 at a time and cook until crisp and brown, about 2 minutes. Remove with a slotted spoon and drain well on paper towels. Serve hot with your favorite sweet and sour dip. Makes about 20 fritters.
