Sweet Onion Apricot Limas

1 1/4     cups  (8 oz.) baby lima beans
1           medium onion, sliced
1           cup sliced dried apricots
1           teaspoon salt
5           cups water
1/2        cup honey

In a large saucepan, place beans and 3 cups water. Soak overnight or boil 2 minutes and let stand 1 hour. Drain.

Combine soaked beans, onion, apricots, salt and water in saucepan; cover and simmer 1 hour.

Add honey; simmer 5 minutes longer. Serve as a hot side dish or cold relish with turkey, chicken or pork. Makes 6 cups. Serves 8.
