Old-Fashioned Barbecue Lima Beans
3 cups dry large lima beans
3/4 cup finely chopped onion (1 small)
1/2 cup ketchup
1/2 cup barbecue sauce
2 tablespoons butter
Salt and Pepper to taste
Soak beans in 8 cups cold water for 1 hour. Drain
Add 10 cups hot water. Bring to a boil. Cover with lid slightly tipped and cook 1 hours until tender, stirring occasionally. Add more water if needed to keep beans covered. Drain, reserving 1 1/2 cups liquid.
Add onion, ketchup, barbecue sauce, and 1 cup of reserved liquid to beans. Cover and simmer over low heat for 30 minutes, stirring frequently to prevent sticking. Add remaining 1/2 cup water if thinner consistency is desired. Let stand covered 10-15 minutes before serving. Makes 8 cups. Serves 8.
