Succotash Pasta
16 oz. small pasta shells
1 teaspoon butter
2 cups diced ham (8 oz.)
1 package (10 oz.) frozen corn
1 package (10 oz.) frozen green baby lima beans
2/3 cup milk (2% or 4% milkfat)
1/2 teaspoon dried sage
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups chopped tomatoes (2 medium)
1/2 cup sliced green onion
1/4 cup chopped fresh parsley
Cook pasta according to package directions. Drain.
In a very large skillet, heat butter over medium-high heat. Add ham; cook and stir until browned, 5 minutes. Stir in corn, beans, milk, sage, salt and pepper. Cook until vegetables are tender, about 5 minutes. Stir in tomatoes, pasta, green onions and parsley. Cook just until heated through. Makes 9-1/2 cups. Serves 6.
